Surround vision and GTX 680 sli

I'm tired of making the wrong decision so thought I'd get some Guru advice before doing it again.

I love surround vision (5760x1080, 60Hz) and wish to be able to play with higher settings than I am now capable of which is a combo of high and very high with no aa. I have GTX 670's 2Gb sli'd and oc'd to 1254 MHz and +450 memory. My favorite games right now are Metro and FC3. I'm having a hard time maintaining 60 fps at these settings and have to enable adaptive vsync to stay playable.

If I were to upgrade to GTX 680 4 Gb sli would I see a noticeable improvement? If so what image quality settings could I expect? Also, would my cpu (i7 2600k @ 4.5) create a bottleneck?

Not a fanboy but I would like to stick with nvidia as I am more comfortable with their drivers than AMD. Old dogs and new tricks or something like that.
